In Okinawa, awamori distilleries offer tours inside their facilities. There are currently about 50 distilleries in all of Okinawa where you can learn about the unique ways of making awamori and the awamori culture that is deeply rooted in Okinawa, as well as sample various awamori that are made using different production processes. There is a distillery that is particular about the handmaking process and earthenware pots used for aging, a distillery that uses nature-made caves for aging, a distillery that is protecting the traditional production method from the Ryukyu Dynasty days, and a distillery that succeeded in the production of awamori made from "KUROKOJI" mold that miraculously survived WWII. Each distillery has its unique way of crafting their awamori, so it is no exaggeration that each awamori has a different taste. Needless to say, you can purchase awamori that suits your taste.
When visiting Okinawa, make sure to go on a tour of an awamori distillery. For example, in the Naha City area where the Ryukyu Dynasty resided, there are rows of distilleries that take pride in their ancient traditions, making it easy to tour around historical distilleries. Furthermore, at distilleries in islands such as "YONAGUNIJIMA" Island and "KUMESHIMA" Island, you will find masterpieces with flavors unique to the distilleries. A trip to savor those unique tastes is also recommended.
So, how are these mysterious awamori born? Here is the process of making awamori that was not presented in detail in the video.
